This was an extra long tweet that I wrote last night and I thought I would love to have your opinion on it too!

"Attraction Isn't A Choice" - How true is this statement really? Read away and let me know.

@charleshercules: Well dude I could like go and on about attraction, but let me put it as simply as I can.

Attraction isn't a choice. I believe that for men and women this is very true.

How do you exactly explain it? Well let me give you an example.

Say you have a female friend who is attractive, intelligent and quite frankly you would date her, in fact you like her and WANT to date her.

You are friends and you flirt occasionally and have a really good time together. You think the more time you spend with her, the more things you buy her, the more she is going to like you.

Because lets face it, it makes perfect logical sense.

I mean your a nice guy, she is a sweet girl, heck her parents think you are the bomb! Then what happens? Some dude from somewhere with a bad ass attitude with multiple girlfriends and a player attitude comes along.

Her parents can't stand him, her friends can't stand him and really it seems like the only one that can is your friend (who is a girl). Who just so happens to be infatuated with him. Wants to be with him all the time and experiences the highs and lows of being with a guy who is a challenge, mostly unavailable, stand offish.

Heck he doesn't even treat her as nicely as he should, yet he has her eating out the palm of his hands.

Now I drive this story to the extreme to demonstrate a point. But to be honest, this is a situation that I see fairly often, if not ALL the time.

So what does this have to do with attraction?

Well the very fact that if you sat down with your girl (friend) and asked her what are you looking for in a guy. She would say something like .. Well I want him to be a good guy. Who is sweet, takes care of me and is genuine. I want him to be funny and kind. bla bla bla.

Who does she ACTUALLY date? The guy who is aloof, never has enough time for her, sees her when its convenient and has the emotional availability of a brick.

So is the statement Attraction Isn't A Choice becoming more apparent now?

The truth is, this chick has NO FREAKING IDEA why the heck she is attracted to this other dude, when she has a guy who is fabulous standing right next to her.

What will she say about you? Yeh "you are a really nice guy(kiss of death)" but I just "excuse, excuse, excuse".

Meanwhile you are left dumbfounded as to what just happened and why she would prefer to date a jerk over you.

Now I'm not saying you have to be a jerk to attract a woman. Far from it.

What I am saying is that there is something that these jerks are doing that is creating attraction in the women around them. That’s what it is about.

So there are two components.

First - Attraction isn't a choice

Second - If it isn't a choice, then how can you learn the skill of it and possibly get different results with the women around you?

Ok THAT was a mouthful, would love to hear your thoughts!

Last year I upgraded from Boyfriend 5.0 to Husband 1.0 and noticed a distinct slow down in overall system performance, particularly in the flower and jewelry applications, which operated flawlessly under Boyfriend 5..0. In addition, Husband 1.0 uninstalled many other valuable programs, such as Romance 9.5 and Personal Attention 6.5, and then installed undesirable programs such as NASCAR 6.0, NFL 5.1 and Golf Clubs 4.1. Conversation 8.0 no longer runs, and Housecleaning 2.6 simply crashes the system.

Please note that I have tried running Nagging 5.3 to fix these problems, but to no avail. What can I do?

If that application works as designed, Husband 1.0 should then automatically run the applications Jewelry 2.0 and Flowers 3.5. However, remember, overuse of the above application can cause Husband 1.0 to default to Grumpy Silence 2.5, Happy Hour 7.0 or Beer 6.1. Please note that Beer 6. 1 is a very bad program that will download the Farting and Snoring Loudly Beta. Whatever you do, DO NOT under any circumstances install Mother-In-Law 1.0 (it runs a virus in the background that will eventually seize control of all your system resources.) In addition, please do not attempt to reinstall the Boyfriend 5.0-program. These are unsupported applications and will crash Husband 1.0. In 2004, Congress passed Republic Act No. 9256, declaring August 21 of every year as Ninoy Aquino Day, a special non-working holiday, in order to commemorate the death anniversary of former Senator Benigno “Ninoy” S. Aquino, Jr. It’s one of the regular and national holidays contained in the subsequent law “rationalizing” the national holidays.
Ninoy is the husband of Corazon “Cory” Aquino. Ninoy was assassinated when he returned to the Philippines in 21 August 1983. Cory later became the President of the Philippines. This year, 2009, August 21 (Friday) to August 23 (Sunday) is a long weekend (click to see other long weekends for 2009 or the declared holidays in 2010). August 21 is a special non-working holiday, to commemorate the death of Ninoy. Incidentally, the burial date of Pres. Cory Aquino, on August 5, 2009, has just been declared as a special non-working holiday (Proclamation 1851).

The labor and employment secretary said the following rules shall apply for special days:

If the day is unworked, the no work, no pay policy shall apply unless there is a favorable company policy, practice or collective bargaining agreement (CBA) granting payment on a special day even if the day is unworked.

If worked, plus 30 percent of the employee's daily rate of 100 percent shall apply on the first eight hours of work, and in excess of eight hours, plus 30 percent of the hourly rate on said day.

If the day falls on the employee's rest day and is worked, plus 50 percent of the daily rate of 100 percent shall apply on the first eight hours of work, and in excess of eight hours, plus 30 percent of the hourly rate.

Last week I went to Ayala Center Cebu to dropped by after I had with an important appointment. Ayala Center Cebu has developed rapidly and simultaneously increasing the number of boutiques. They removed the Lagoon and replaces this Ayala Terraces (photo above) which is more decent and comfortable rendezvous for most businessmen and businesswomen. I can hardly specify the exact side of the mall this Terraces situated since I am not used to unwind in Ayala mall. The magnificent view has captured my interest to reflect and be alone for a while.

The Mandaue Business Month 2009 is set to kick-off with a promising and exciting events in August, a whole month celebration starting August 3 organized by the Mandaue Chamber of Commerce and Industry (MCCI).

The press launched yesterday at the Cafe Laguna was attended by Mandaue Chamber officers, City of Mandaue officials and the Hon. Governor Gwen Garcia who also inducted the MCCI Officers for 2009-2010.

MCCI President Eric Mendoza said the promising events for this year’s MBM despite the crisis that (we) are experiencing today.

Mr. Phillip Tan, MBM 2009 Chair, also presented the line up of events and activities. The ONE Cebu expo by the province of Cebu will also be merged with the activities of MCCI.

The One Cebu Business Summit that is set on August 10 will also be one of the major events during the celebration and will tackle more on global economic crisis, corporate growth during difficult times and strategies to enable stakeholders to match economic goals with environmental solutions.

For the 2nd year, the MCCI will also hold the My Business Idol search to promote entrepreneurship among students from different schools and Universities here in Cebu.

These are the list of possible holidays in Cebu on August 5, 6, 21 and 31

August 5, the scheduled burial date for former President Corazon Aquino, has been declared a special non-working holiday, it was learned Sunday.

Press Secretary Cerge Remonde said the proclamation would "give Filipinos a chance to pay their respects and appreciation" to the late former president.

Executive Secretary Eduardo Ermita said President Gloria Macapagal-Arroyo would cut short her trip in the United States so she could attend the funeral. He said she would fly Monday from New York to San Francisco for a refuel stop and was expected to arrive in Manila early Wednesday morning, just in time for the funeral.

Wednesday, Cebu will have two other holidays for the month of August.

On Wednesday, the whole Province of Cebu, as well as the highly urbanized cities of Cebu, Mandaue, and Lapu-Lapu, celebrates a special non-working holiday to commemorate the 439th founding anniversary of the province.

It will also be a special non-working holiday on Monday, August 18, in celebration of the death anniversary of Benigno “Ninoy” Aquino on August 21.

Though Aquino’s death anniversary is on August 18, President Gloria Macapagal-Arroyo, through Presidential Proclamation 1468, moved its celebration to August 21 to give Filipinos an extended weekend.

The same proclamation moves the celebration of National Heroes Day from Aug. 28 to August 31 – a regular non-working holiday – again to give Filipinos an extended weekend.

Wednesday’s holiday is covered by Republic Act (RA) 8952 passed in 1999, said Elias Cayanong, regional director of Department of Labor and Employment Central Visayas.

RA 8952 amends RA 7698, the Charter of the Province of Cebu. The amendment includes in the province’s holiday component cities and highly urbanized cities that were once part of the province.

Cayanong said those who work on special non-working holidays like Wednesday and August 18 are to receive 30 percent more compensation for the day. Those who chose not to work are not entitled to any pay.

On regular non-working holidays like August 25, workers still get the equivalent of a day’s pay if they do not report for work, and double pay if they do report for work, Cayanong said.

Why did it take Maye longer to say hello to her mom than Yek's whole conversation with his dad? Because men and women are different. Women go into detail because they use words to connect on an emotional level. Men, on the other hand, use words in order to communicate information. That's why just saying hello and goodbye for a woman can take longer than an entire conversation for a man.

Understanding this is the key to appreciating your wife. If you really want to make her feel appreciated, then allow her to connect to you emotionally through those details. That's what she needs.

Now you understand why, when you ask her how work was today, she answers, "Oh, at the beginning it was great. I was walking down the street, looking at the sky and thinking that maybe..." She's connecting to you.

Be open enough to listen.

She'll feel that you appreciate who she is and what she thinks and feels. In 17,000 BC, ancient Transformers called the Dynasty of Primes scoured the universe with the intention of draining the energy from stars to create Energon and power the AllSpark, the life source of the Transformers, using a machine called a Sun Harvester. The Primes agreed that life-bearing worlds would be spared, but one of their own betrayed the others and constructed a Sun Harvester on Earth. Unable to beat their brother, the Dynasty sacrificed their bodies in order to hide the Matrix of Leadership, the key used to power the Sun Harvester. The treacherous Prime was dubbed the Fallen, and vowed to seek revenge upon Earth.

In present day, set two years after the events of the first film, Optimus Prime leads NEST, a military organization consisting of American and British troops and his own team of Autobots, which includes newcomers Arcee, Sideswipe, Jolt, and the twins Skids and Mudflap. NEST ventures into Shanghai, China. Sideswipe chases and kills Decepticon Sideways. Then before getting killed by Optimus, Demolishor, one of the Decepticons, declares that “the Fallen shall rise again.”

Sam Witwicky heads off to college to continue a normal life, leaving behind his Autobot guardian Bumblebee and his girlfriend Mikaela Banes. He finds a piece of the Allspark, which he gives to Mikaela for safekeeping. Wheelie attempts to steal the shard but is captured by Mikaela. Sam meets his college roommate, Leo Spitz, who runs an alien conspiracy website. He also meets Alice, who makes aggressive advances towards him.

Soundwave, a Decepticon intelligence officer, hacks into a satellite to eavesdrop on the NEST forces, learning the location of the dead Decepticon leader Megatron and another piece of the AllSpark. He deploys Ravage to retrieve the shard, which is then used to resurrect Megatron. Megatron flies through space to a Decepticon spacecraft, where he is reunited with Starscream and his master, the Fallen. The Fallen instructs Megatron to capture Sam, as his mind now contains the Allspark’s knowledge, including the location of the Sun Harvester. Sam has a mental breakdown in his astronomy class, writing Cybertronian symbols on the chalkboard. Mikaela comes to his aid just as Alice attacks, revealed to be a Decepticon Pretender, a Transformer in a human guise. Sam, Mikaela and Leo drive off, running over Alice in the process, but are then captured by Grindor. Scalpel, a Decepticon doctor, prepares to remove Sam’s brain, but Optimus and Bumblebee appear and rescue him. In the following battle, Optimus takes on the Decepticons on his own, killing Grindor, however, he is ultimately killed himself, stabbed from behind by Megatron.

Megatron orders a full-scale assault on the planet. The Fallen speaks to the world and advises them to surrender Sam to the Decepticons or they’ll continue their attack. Sam’s parents are captured by Rampage. Sam, Mikaela, Leo, Bumblebee, the Twins and Wheelie regroup, Leo believing his online rival “RoboWarrior” may be of assistance. The man is revealed to be former Sector Seven agent Simmons. Simmons reveals his hidden alien archive and explains that the Transformers have visited Earth before, as their language is written on ruins all over the world. Wheelie identifies the language as that of the Primes but only a Seeker can translate it; Seekers being used by the Primes to locate suitable stars for harvesting. They find such a Seeker, an aging Decepticon named Jetfire, who defected to the Autobots.

Upon learning the situation, Jetfire teleports the group to Egypt via a space bridge and explains that the tomb of the Primes is located in the surrounding desert, and only a Prime can kill the Fallen. By following the clues, the group find the Matrix in a tomb in Petra, but it crumbles to dust in Sam’s hands. Believing the Matrix can still revive Optimus, Sam collects the dust and instructs Simmons to telephone Major William Lennox to bring the other Autobots and Optimus’ body.

The military arrives in short order, but are tracked by the Decepticons, resulting in an intense battle. During the battle, Bumblebee rescues Sam’s parents from Rampage, killing both him and Ravage in the process. Devastator is then formed and unearths the Sun Harvester in one of Egypt’s pyramids before being blown to pieces by a railgun fired from a nearby destroyer. The airforce carpet bombs the Decepticons, but Sam is caught at the edge of the blast and killed. In a vision, Sam meets with the other Primes, who tell him that the Matrix of Leadership must be earned, which Sam has done. Sam is brought back to life and the Matrix reforms from the dust. Sam uses it to revive Optimus, but the Fallen, with aid from Megatron, steals it shortly thereafter to activate the Sun Harvester. Jetfire, having been mortally wounded by Scorponok, gives up his life and parts to give Optimus the strength he needs to defeat the Fallen. Optimus destroys the Sun Harvester and then fights both Megatron and the Fallen, destroying the Fallen and leaving Megatron heavily wounded. Starscream convinces Megatron to retreat.

22nd Street is a comedy bar located in mango avenue, cebu city. Its next to national book store (famous as it seems like its a landmark for students meetings). It accessible by jeepneys (local mode of transport)which cost around 6php from end to end wherever you stop in a paricular route. And of course taxi is the easiest - just insist on the meter and not a bargain price so you dont pay more. if youre taking your own car there is an available pay parking just behind the building at 20php per car.
Attire is casual, there is an entrance fee of 100php(2USD)and 2 beers that goes with it, so it doesnt really hit you as an entrance fee. The place is always full of laughing bunch of people and often they dont take reservations, so its better to come earlier than 9pm. There is a stage opposite to the entrance door where 5 gay entertainers are singing or acting. They are so funny that its normal to throw a fit of laughter non-stop all night. But there is one thing that you need to keep in mind. Choose your seat wisely, if you are the shy type - dont dare sit in front of the stage, the gays are so daring that they will make you cry for the fun of it, sometimes they take you to the extremes as a subject for their joke, but if you're the bold and daring - then sit as close to the stage as possible. they will never miss you out. You can also sing with them on stage to complete your evening, but the entertainers are quite talented so, you have to level with them or on the extreme - be the opposite and people will cheer on. Or if you prefer to be on the backstage you can just write your favourite song on the napkin provided on your table and the entertainers will sing it for you after calling your your name out loud or addressing your table and making you stand and bow to the public.
This place is highly recommended. must visit when you're in Cebu...believe me you will be laughing even when youre driving back home.

Sunflower is a disco bar and live music. It is located in lahug, Cebu City, easy to find as it is just behind the Cebu City Waterfront hotel (huge palace like building from a distance) in fact it is realy huge even when near. Anyway, sunflower can be accessible by public transport (jeepney or by taxi) but I would advise to go on a taxi as the jeepneys route is quite a challenge to make it right the first time. although its the cheapest way (6php per jeepney ride), but on the downside, its not airconditioned and if your hair is a bit damp then, you will have an instant blow dry with dust cligning on it. Taxi is always a safe choice specially if you dont know the jeepney stops around the area. Just insist on the meter as sometimes you pay more with an agreed rates (drivers sometimes takes advantage of you specially if they think you dont know where youre going). If you are taking your own transport, there are lots of parking space, however, there will be people who will volunteer to look after your car while your away, I dont know for what but I guess its better, you can just give them whatever coins you have or around 10php, they will be happy with this. also, its an advantage to bring your own car as it is difficult to get a transport after 1 or 2 am. There is an entrance fee of about 300php (6-7 USD), and you get 2 drinks with that! so, its not bad. There is a huge stage extreme left from the entrance with live band and a dance floor just below the stage. There are a lot of setting area should you wish to have dinner and lot cocktail chairs and tables just next to the bar on the left side of the stage. The ambiance is great, this is also a travellers point where most tourist comes by so its a place to meet and greet. Just be on guard for gays as this place has many and you cant figure out a gay from a woman. But this place is really cool I recommend this place to anyone visiting Cebu...

Sinners and Saints is a bar/disco with food located in Banilad, Cebu City, its a walk away from Gaisano country mall (opposite side of the road). The name sounds naughty though and I was wondering all along what's behind it. The staff is either portraying an angel with matching wings and a halo on their head or a devilish flair - typical cape of black and red. It is accessible by Public transport (jeepneys) or by taxi. If you're taking your own car the parking is a bit challenging, however with the Mall being close you can just park your car there and walk. I went there with my barkadas (bestfriends in local dialect), its the first night out together since everyone came home for summer. The singer of the Band was our schoolmate back in highschool - so we went there. The beverage prices are cheap. Since we were a bunch of drinking all night friends, bottles are good buys! A bottle of Rum Bacardi cost 24USD and a bottle of JW Red is 30USD. The food though was quite over priced, but who cares when you have a bottle to drink? The food will taste like any other. The price for plate of Calamari is 120(2.20USD). but the priced of the peanuts in a platter (really small portion) is 60php (1.2USD) - we started thinking that they make money out of peanuts in this place! Anyway, if youre up for dancing on the stage or grabbing the microphone from the singer - this place is for you. The ambiance though is not as good as we expected but I believe wherever you go if the people you are with are fun to be with then its always a good time. The band was great, although its quite common in Cebu to see a quality band as this place is breeding talents.

We had so much fun that it was difficult to leave the place, the staff had to turn off the lights for us to make a decision of calling it a night.

Club Vudu is the best club in Cebu. I can't really vouch for that since It's the only club I visited while I was there... two nights in a row. Well, maybe it's true.

The club is a dual level party place. The Main room plays mainly hip-hop/R&B, while the VIP room on the second floor plays house music. The crowd is pretty much composed of the younger set - those who made it pass the minor age mark to those in their late twenties. Of course there's quite a number of expats and tourists who join in on the fun - Koreans being the majority of them. My friend tells me it's where foreign celebrities (like a certain Renee Zelwegger and Uma Thurman) slip in and out quietly. I don't know how much of that is true, it might be the booze talking.

As for the music, there was a lot of mixing going on in the main room, wherein once your favorite song starts to play expect it to last up until the chorus that fades into another song. You kinda feel cheated by the music - you hear YOUR song, but before you even get your groove on it's over. Not my cup of tea if you ask me. I like the my dance music to be at least 4 minutes long... that included 2 verses and 2 chorus lines and a minute of gradually fading into the next song. During the two nights I was there, nothing was going on in the VIP room - people where just standing and perhaps cruising each other. The music in the VIP room plays a little longer though.

As for the place itself, It's too small, It needs to have a bigger dance floor and the toilet needs to be improved too. But besides these observations, I think it's a pretty good place to just dance and drink the night away.

On a short visit to the Queen City of the South, my informer brought me to this PLU hang-out along mango ave. numero doce layout reminded me of rainbow project, the bar beside bed malate. open layout with just dance music in the background. my informer tells me that the place gets packed on weekends.

however, he tells me that the good looking, truly discreet cebuanos would not be seen in public. in rare occasions, they make their presence felt in this bar. lucky is the guy who bags such a treasure!

but it was a slow night that weekday. just a few tables with swishy types having red horse.

informer tells me, too, of the explosion of massage parlors in the city, all with extras included! too bad i didnt have time. maybe next time =)

Tinolang tahong is a simple Pinoy way of coo k ing tahong or mussels. The broth of tinolang tahon g is very refreshing. The best way to cook is first boil the water with the aromatics before adding the mussels. Should you prefer more broth then you have to add more water and little salt to taste. Lemongrass could be boiled with the water if you want an additional zest to the dish. Overcooking will shrink the mussel meat therefore it is very important that is should be cooked until the shells had opened.

Guinataang kuhol. When I was working in Makati we us ed to frequently drink after office hours on a foodcourt near our office. Our favorite pulutan was guinataang kuhol that was abo ut 25 years ago. At that time we were not worried where t he snails came from. Today I would think twice before I buy snails, it is best to ask where those snails came from. Of course I a m not always satisfied by the shell monger’s answer, it is always best to clean the snails properly. I don’t rely on just breaking the tip of th e snail shell. I would recommend chopping it off and removing all visible entrails or better removing them from the shell and trimming off the entrails, wash thoroughly and returning them back to their shell.

Inihaw na Pusit

Inihaw na pusit is one of the most ordered food in any g rilled seafood restaurants and fassfoods or foodcourts. I myself have been ordering inihaw na pusit before until I was feed up on the quality of restaurant's inihaw na pusit. Most of the time their inihaw are not fresh or have been pre-cooked and of course overcooked to the point that the squid meat is like rubber. To have a soft and succulent grilled squid it should only be grilled or cooked briefly otherwise the meat will be hard as rubber. Can you imagine a half cooked un-fresh, bilasang pusit, and the rip-off prices these r estaurants are charging for their un-edible grilled squid.

Sinigang na Baboy with kamias Flavored Soup

Sinigang is a beef innards and skin soup, flavored with bile and kamias specialty of Vigan. When you’re at Vigan sinanglao are served at street side eateries in the morning. Versi on defends on family preferences, some substitute kamias with tamarind or even vinegar. Some even refer papaitan as sinanglao. Ingredients are readily available at the Vigan wet market and are sold in sets complete with coagulated blood and bile. Sourcing the ingredients elsewhere especially if you are over seas is a problem. Not unless you can order from the butcher strait from the slaughterhouse. The papaitan sets or tripes, beef hocks and tail with skin sold in some meat shops when you’re overseas are a good substitute. My sinanglao ingredients are sourced using papait an set sold at wet market and the beef face and tendons bought from beef section of supermarket.

Liempo or grilled pork belly. Tinuno or inihaw is a popular way of cooking fresh meat and fish in Ilocos. Inihaw na bangus, grilled milkfish. I once live along a coastal barangay along the Laguna bay. When in season or when the fish pens over flows due to typhoon bangus are a bargain. T he best way of cooking fresh bangus would of course grilling and my personal favorite is with onion, tomato, ginger and bagoong alamang stuffing wraped in aluminum foil. Aluminum f oil traps all the juices from the fish and the stuffings which then steam infused all the flavors to the fish. The fish is moderately charred outside but really moist inside. Grilled bangus dip in a mixture of soy sauce, kalamansi and hot sili make everyone droll.

Lechon Manok

Lechon manok, turbo broiled chicken. Here is a fathers day special lechon manok. I love Andok’s lechon manok, it is just roast right to tenderness. The aroma of lemon grass, the sour, salty and succulent chicken meat dip in sweet lechon s auce. Here is the recipe of my broiled chicken similar to the popular Andok’s lechon manok. The secret is do not overcook the chicken. The meat should be tender and succulent.

Bicol Express

Bicol express, gulay na lada. Here is a fiery dish associated with the Bicolanos as the name connotes. It is widely acknowledged that Bicol express was invented in Manila, what’s in a nam e, it is a fact that these dish is similar to gulay na lada which is a popular native Bicolano dish.

To tune down the fieriness of the original dish I have used mixed jalapeno chilies and siling haba, again you could always use your own ratio or if you can handle really hot use only siling haba. For an added zest I added a couple of pinches of turmeric this will also give little color to the whitish original dish.

La Paz Batchoy

La Paz batchoy has always been my favorite mami noodle. The nature of my work require that I travel to different places and Iloilo is one of the place I could never forget, food is one the City’s attractions. To name a few they have chicken inasal, piaya, biscocho, pancit molo and of course La Paz batcho y. La Paz batchoy is a must dish when ever I travel to Iloilo, the authentic La Paz batchoy of Iloilo has that distinct salty, sweet and spicy flavor that is only unique in Iloilo.

Pork Barbecue

Pork barbecue is another popular food of Pinoys. It is often sold at neighborhood street hawker in the evenings. Pork barbecue is one of the favorite of children and of course by all. There are no rules on the ingredients of the marinade, from soy sauce with kalamansi to the banana ketchup laden street barbecue or to the worcestershire sauce spiced barbecue of your favorite restaura nt. The easiest and fastest way is to use the commercial barbecue marinade. The best barbecue should be grilled just cook with the slight charcoal burnt on the meat. Definitely do not overcook if you don’t like dry and hard barbecue. If its possible always cook in an open flame charcoal grill.

Humbang Baboy

Humba, Adobong Bisaya is very popular dish in Visayas and most part of Mindanao, at some places they call it adobong Bisaya. Humba is basically cooked same way with adobo, it is a bit salty and sometimes sweetened with panocha or brown sugar but not too sweet compared to the Tagalog version. It has to be cooked dry and oily, to keep the shelf life longer with out refrigeration. It is during fiestas that this dish is prepared when the pigs are slaughtered for the celebration.

Talaba (Oyster)

It was tedious afternoon when my wife and I decided to put some color of adventure for our day, we decided to buy some oyster and to be eaten during sunday-get-together-snack. It was not my first time to go there, whenever we crave for talaba (yes i.e. oyster) we instantly go to ‘Lacion or Liloan Market to buy some. Befo

re it cost 30/kilo but now due to inflation/gasoline (I don’t know if they only make the gasoline an excuse to increase their price), it cost 35/kilo.

I was sad when I learned that due to pollution and environmental conditions the Talaba farm in ‘Lacion cannot produce their own talaba , alternatively they have to get their supplies from neighbouring province like Negros. Every two weeks or so they have to transport thirty (30) bags of oyster and have it place on their own pond in order to live.

It is a very unpleasant fact that the place who used to develop and produce this d electable food are crippled by the human abuse of the environment.

Pochero

We saw these wonderful beef shanks at the grocery and they were screaming “pochero, pochero!” so we brought them home, took out a large enameled pot and started cooking them… Pochero is the Cebuano term for what is essentially the Tagalog Beef Bulalo, though with a few other ingredients at play. First, I rinsed the beef shanks and placed them in a single layer in the pot. Added water to about an inch over the shanks and brought this up to a boil. After a minute or two, I threw out all of the water, carefully rinsed

the shanks and replaced them back in the now cleaned pot, added more water and turned the heat back on. This step is meant to reduce the amount of scum that appears and which you have to skim off. The scum turns into a cloudier broth later on. Having done this extra step, I have to admit that there was still some scum that formed during the second boiling…

Kinilaw/Ceviche

Kinilaw is Filipino raw-fish salad that’s extremely popular in the Southern Visayas region. It’s similar to a Ceviche and is served as a side dish, but is an excellent appetizer. It’s refreshing, tasty and a great party dish. It’s raw fish soaked in vinegar and acompanied by other spices like ginger, garlic,chili and onions.
